New Hampshire Based Fabrizia Spirits Uses Reverse Osmosis Water To Make Adult Beverages (and hand sanitizer!)
Secondwind Water loves working with other small businesses in the state. We think our resident Italian, Steve Guercia particularly loved helping our new customers Fabrizia Spirits in Salem, NH. Fabrizia Spirits produces high quality, all natural, small batch Limoncello’s and Ready-to-Drink Cocktails (with Limoncello in them of course).They are a citrus spirits market leader in both product quality and sales throughout New England, as well as several other markets across the country. Their recipe is a family one that comes straight from Italy. Steve also has family in Italy and we’re sure many a story were exchanged over the course of the time it took for us to get a reverse osmosis system configured to meet the needs of making some of the best Limoncello around!
Water Is As Important As the Lemons

Fabrizia Spirits has been making limoncello and other related beverages for over 10 years. They use RO (reverse osmosis) water to make these products. RO is a process that uses a special semi-permeable membrane to separate water from its impurities. The result is a safe, clear, great tasting water that improves the taste of anything made with it.
At the time we met Nick and Phil Mastrioanni, the brother duo who founded the company, their existing RO was 5 – 10 years old, which honestly isn’t very old for this type of system. It wasn’t making enough water to meet their daily requirements and it did not fill their production tanks fast enough.
Nick and Phil had learned early on that the quality of their water is as important as the quality of the lemons they use to make their signature Limoncello, so this problem was one they wanted to remedy quickly and affordably. They couldn’t find a solution with their current water treatment provider. So Nick called Secondwind Water Systems for help.
On our initial evaluation we helped the owner understand how his treatment worked, and he helped us understand how his process worked. We were able to identify several deficiencies in the existing treatment system and offered a number of options for getting water to his production tanks faster.
Working To Solve The Problem
This is a complicated situation that requires heavy production of water.
We noted that the slow production of the RO would be more of a problem once we were able to pump the stored water faster. We also mentioned that the high operating pressure the previous company set up was destroying the RO membranes.
So, we added another booster pump and a meter that allowed Fabrizia to always know their water quality.
Now he was filling production very quickly but he couldn’t turn down the RO pressure because it was still not making water fast enough.
Then Covid-19 came along.
Fabrizia switched production from limoncello to hand sanitizer. They were still not getting enough RO water to meet production. They needed a larger RO immediately.
We had two large ROs in stock from a customer that ordered in May for a July installation. We could use one of those and still have a replacement in by July. So, Fabrizia went form a 1200 gallons per day (gpd) RO that actually made less than 1,000 gpd to a 4500 gpd RO that makes over 4,000 gpd.
Fabrizia can now fill their production tanks quickly and they never run out of water because the new RO makes water faster than they can use it. They are ecstatic.
